For many people, this Thanksgiving is going to be unlike any they have ever known, as they try to keep their loved ones protected during this pandemic.

For me, I’m choosing to stay home with my young adult daughter, so it will just be the two of us. This year, I told her I would make whatever she wanted for our Thanksgiving meal, so here’s what she has requested:

Golden Fried Rice

Green Beans

Mashed Potatoes with Mushroom Gravy

Sweet Potato Pie

We’ve been mostly plant based for some time, so we weren’t planning on having any meat anyhow. Normally I would do something to provide a more protein heavy plant based entree, but this year has been so totally weird, I said ok what the heck, that’s what we will have!

Since we are not totally plant based, there will be eggs in the fried rice and also in the pie, so there’s that. In looking at what my daughter has requested, it really dawned on me that for most every holiday, I’ve bowed, at least in part, to expectations of extended family members and also the cultural traditions of the South.

So in a way, this menu seems really freeing. My daughter loves all of these dishes, and so do I, even though I never thought of serving them together in a single meal. But these dishes are all easy to make and each delicious in their own way. I’m just grateful to be able to make them for my daughter and to have a day we can be together and enjoy our food and each other. Let’s eat y’all…!
