OK just tried out the leftover plant based BBQ brisket I made for Christmas for roast “beef” sandwiches and I must say, the sandwiches were spectacular. That’s the beauty of cooking a big holiday meal…

you don’t have to cook anything else for several days and can use your leftovers in all kinds of creative ways. Here’s what I did:

I sliced the brisket very thinly, then placed several slices on whole grain toast with spicy mustard, a smear of leftover cranberry/orange/ginger relish and some Duke’s mayo (is there any other kind? 🙂

So, so good! This brisket is a total winner and I’m definitely going to make it again, but going to try to tweak the texture just a little bit to see if I can get it to be a bit firmer. If so, then it will be perfect. Let’s eat y’all…!
